Ingredients:

  • 1.5 cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 0.5 teaspoon salt
  • 1.25 cups whole milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. Whisk the all-purpose flour, baking powder, sugar, and salt in a large mixing bowl to remove large clumps.
  2. In a separate jug or bowl, whisk together the milk, egg, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Stir with a spoon until just combined; the batter should be thick and lumpy. Do not over-mix.
  4. Heat a non-stick skillet or griddle over medium-high heat. Lightly grease with a small amount of butter or oil.
  5. Pour 1/4 cup of batter for each pancake onto the hot surface.
  6. Cook until bubbles form on the surface and the edges appear set and matte. Flip the pancake.
  7. Cook the second side for 1-2 minutes until golden brown and cooked through.
