Ingredients:
- 1.5 cups all-purpose flour
- 3.5 teaspoons baking powder
- 1 tablespoon granulated sugar
- 0.5 teaspoon salt
- 1.25 cups whole milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions:
- Whisk the all-purpose flour, baking powder, sugar, and salt in a large mixing bowl to remove large clumps.
- In a separate jug or bowl, whisk together the milk, egg, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients. Stir with a spoon until just combined; the batter should be thick and lumpy. Do not over-mix.
- Heat a non-stick skillet or griddle over medium-high heat. Lightly grease with a small amount of butter or oil.
- Pour 1/4 cup of batter for each pancake onto the hot surface.
- Cook until bubbles form on the surface and the edges appear set and matte. Flip the pancake.
- Cook the second side for 1-2 minutes until golden brown and cooked through.
