Ingredients:

  • 1.5 lb boneless skinless chicken breasts, sliced into even 1-inch strips
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1/2 cup cayenne-based hot sauce
  • 4 tbsp unsalted butter, melted
  • 1 tbsp honey
  • 1/2 tsp onion powder
  • 1 tsp fresh lime juice

Instructions:

  1. Pat the chicken strips completely dry with paper towels. Note: Wet chicken steams instead of searing
  2. In a medium bowl, toss the chicken with olive oil, salt, pepper, and garlic powder until evenly coated.
  3. Heat a large non stick skillet or cast iron pan over medium high heat.
  4. Once the oil is shimmering, add chicken in a single layer. Cook for 3-4 minutes without moving them until you see a golden brown crust.
  5. Flip the strips and cook for another 3-4 minutes.
  6. While the chicken sears, whisk together the hot sauce, melted butter, honey, onion powder, and lime juice in a small bowl.
  7. Pour the sauce mixture directly into the pan over the cooked chicken.
  8. Stir constantly for 2 minutes until the sauce bubbles and thickens into a glossy glaze.
  9. Remove from heat immediately when the internal temperature reaches 165°F (74°C).
