Ingredients:
- 1.5 lb boneless skinless chicken breasts, sliced into even 1-inch strips
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tsp garlic powder
- 1/2 cup cayenne-based hot sauce
- 4 tbsp unsalted butter, melted
- 1 tbsp honey
- 1/2 tsp onion powder
- 1 tsp fresh lime juice
Instructions:
- Pat the chicken strips completely dry with paper towels. Note: Wet chicken steams instead of searing
- In a medium bowl, toss the chicken with olive oil, salt, pepper, and garlic powder until evenly coated.
- Heat a large non stick skillet or cast iron pan over medium high heat.
- Once the oil is shimmering, add chicken in a single layer. Cook for 3-4 minutes without moving them until you see a golden brown crust.
- Flip the strips and cook for another 3-4 minutes.
- While the chicken sears, whisk together the hot sauce, melted butter, honey, onion powder, and lime juice in a small bowl.
- Pour the sauce mixture directly into the pan over the cooked chicken.
- Stir constantly for 2 minutes until the sauce bubbles and thickens into a glossy glaze.
- Remove from heat immediately when the internal temperature reaches 165°F (74°C).
