Ingredients:

  • 1 lb smoked sausage, sliced diagonally
  • 1.5 lbs baby potatoes, quartered
  • 2 large bell peppers, chopped into 1-inch pieces
  • 1 medium red onion, cut into thick wedges
  • 1 cup broccoli florets, bite-sized
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
  2. Quarter the baby potatoes into uniform sizes and slice the smoked sausage on a diagonal to increase surface area for browning.
  3. In a large mixing bowl, combine the sliced sausage, quartered potatoes, chopped bell peppers, red onion wedges, and broccoli florets.
  4. Pour the olive oil over the ingredients and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss vigorously until every piece is evenly coated and glossy.
  5. Spread the mixture across the prepared baking sheet in a single layer, ensuring pieces are not touching or overlapping to allow for proper roasting.
  6. Roast in the oven for 45 minutes.
  7. Halfway through, use a spatula to flip the ingredients. Wait until the potatoes are golden brown and the sausage is caramelized.
  8. Remove from the oven and let it sit for 5 minutes before serving to allow the juices to settle back into the meat.
