- 2 large bell peppers, chopped into 1-inch pieces

- 1 cup broccoli florets, bite-sized

- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions:
- Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
- Quarter the baby potatoes into uniform sizes and slice the smoked sausage on a diagonal to increase surface area for browning.
- In a large mixing bowl, combine the sliced sausage, quartered potatoes, chopped bell peppers, red onion wedges, and broccoli florets.
- Pour the olive oil over the ingredients and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss vigorously until every piece is evenly coated and glossy.
- Spread the mixture across the prepared baking sheet in a single layer, ensuring pieces are not touching or overlapping to allow for proper roasting.
- Roast in the oven for 45 minutes.
- Halfway through, use a spatula to flip the ingredients. Wait until the potatoes are golden brown and the sausage is caramelized.
- Remove from the oven and let it sit for 5 minutes before serving to allow the juices to settle back into the meat.
