Ingredients:
- 1 lb (450g) Smoked Turkey Sausage, sliced into ¼ inch rounds
- 1.5 lbs (680g) Baby Gold Potatoes, quartered
- 1 lb (450g) Fresh Green Beans, trimmed and snapped
- 1 medium (110g) Yellow Onion, diced
- 4 cloves (20g) Garlic, minced
- 2 tbsp (30ml) Extra Virgin Olive Oil
- 1 tsp (2g) Smoked Paprika
Instructions:
- Heat 1 tbsp (15ml) of olive oil over medium-high heat. Add the sliced sausage rounds in a single layer and sear for 3-5 minutes per side until they develop a deep mahogany-colored crust. Remove the sausage from the pan and set aside.
- In the same pan, add the remaining 1 tbsp (15ml) of oil and the quartered potatoes. Cook undisturbed for 5 minutes to achieve a golden-brown exterior, then stir and cook for another 5-7 minutes until slightly softened.
- Stir in the diced onion and cook until translucent (about 3 minutes). Add the minced garlic and smoked paprika, stirring for 60 seconds until fragrant.
- Fold in the fresh green beans and return the browned sausage to the pan. Reduce heat to medium-low, cover the skillet with a lid, and steam for 5-8 minutes until potatoes are finished and beans are tender-crisp.
