Ingredients:

  • 1 lb (450g) Smoked Turkey Sausage, sliced into ¼ inch rounds
  • 1.5 lbs (680g) Baby Gold Potatoes, quartered
  • 1 lb (450g) Fresh Green Beans, trimmed and snapped
  • 1 medium (110g) Yellow Onion, diced
  • 4 cloves (20g) Garlic, minced
  • 2 tbsp (30ml) Extra Virgin Olive Oil
  • 1 tsp (2g) Smoked Paprika

Instructions:

  1. Heat 1 tbsp (15ml) of olive oil over medium-high heat. Add the sliced sausage rounds in a single layer and sear for 3-5 minutes per side until they develop a deep mahogany-colored crust. Remove the sausage from the pan and set aside.
  2. In the same pan, add the remaining 1 tbsp (15ml) of oil and the quartered potatoes. Cook undisturbed for 5 minutes to achieve a golden-brown exterior, then stir and cook for another 5-7 minutes until slightly softened.
  3. Stir in the diced onion and cook until translucent (about 3 minutes). Add the minced garlic and smoked paprika, stirring for 60 seconds until fragrant.
  4. Fold in the fresh green beans and return the browned sausage to the pan. Reduce heat to medium-low, cover the skillet with a lid, and steam for 5-8 minutes until potatoes are finished and beans are tender-crisp.
