Ingredients:

  • 1 medium head Green Cabbage (approx. 2 lbs / 900g), cored and thinly sliced
  • 1 medium Yellow Onion, halved and thinly sliced
  • 2 tbsp Unsalted Butter
  • 1 tbsp Extra Virgin Olive Oil
  • 3 cloves Garlic, minced
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Cracked Black Pepper
  • 1 tsp Apple Cider Vinegar

Instructions:

  1. Place a 12-inch heavy-bottomed skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter. Heat until the butter is foaming and shimmering.
  2. Add the sliced onion and cabbage to the pan in an even layer. Let it sit undisturbed for 2–3 minutes to allow the bottom layer to develop a golden-brown, charred crust.
  3. Toss the cabbage and continue to cook for 5–6 minutes, stirring occasionally, until the cabbage is wilted but retains a slight snap.
  4. Create a small well in the center of the vegetables. Add the remaining 1 tablespoon of butter and the minced garlic. Sauté for 60 seconds until fragrant.
  5. Season with kosher salt, cracked black pepper, and apple cider vinegar. Toss everything together to coat and serve immediately.
