Ingredients:
- 1 medium head Green Cabbage (approx. 2 lbs / 900g), cored and thinly sliced
- 1 medium Yellow Onion, halved and thinly sliced
- 2 tbsp Unsalted Butter
- 1 tbsp Extra Virgin Olive Oil
- 3 cloves Garlic, minced
- 1/2 tsp Kosher Salt
- 1/4 tsp Cracked Black Pepper
- 1 tsp Apple Cider Vinegar
Instructions:
- Place a 12-inch heavy-bottomed skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter. Heat until the butter is foaming and shimmering.
- Add the sliced onion and cabbage to the pan in an even layer. Let it sit undisturbed for 2–3 minutes to allow the bottom layer to develop a golden-brown, charred crust.
- Toss the cabbage and continue to cook for 5–6 minutes, stirring occasionally, until the cabbage is wilted but retains a slight snap.
- Create a small well in the center of the vegetables. Add the remaining 1 tablespoon of butter and the minced garlic. Sauté for 60 seconds until fragrant.
- Season with kosher salt, cracked black pepper, and apple cider vinegar. Toss everything together to coat and serve immediately.
