Ingredients:

  • 4 boneless skinless chicken breasts (approx. 1.5 lbs / 680g)
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions:

  1. Pat the chicken breasts dry with paper towels. Use a meat mallet or heavy skillet to lightly pound the thickest part of each breast until they are of even thickness.
  2. In a small mixing bowl, whisk together the olive oil, sea salt, black pepper, garlic powder, and smoked paprika.
  3. Coat each chicken breast thoroughly with the oil and seasoning mixture, ensuring a complete seal around the meat.
  4. Place chicken on a large rimmed baking sheet and roast in a preheated oven at 425°F (218°C) until the internal temperature reaches 160°F (71°C), typically 20-25 minutes.
  5. Remove from the oven and transfer to a plate. Let the meat rest for 5-10 minutes to allow the internal temperature to rise to 165°F (74°C) via residual heat.
