Ingredients:
- 1 lb smoked sausage, sliced into 1/2-inch rounds
- 1.5 lbs Yukon Gold potatoes, cut into 1-inch chunks
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions:
- Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- Cut the potatoes into uniform 1-inch cubes and slice the smoked sausage into even 1/2-inch rounds.
- In a large mixing bowl, combine the sliced sausage and potato chunks. Drizzle with olive oil and add the garlic powder, smoked paprika, dried oregano, salt, and black pepper.
- Toss the mixture vigorously until all ingredients are evenly coated in oil and seasoning.
- Spread the mixture in a single layer on the prepared baking sheet, ensuring pieces are not overly crowded to allow for roasting rather than steaming.
- Roast for 40–45 minutes, flipping the mixture halfway through with a spatula, until potatoes are golden-brown and the sausage edges are crisped.
