Ingredients:

  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 1.5 lbs Yukon Gold potatoes, cut into 1-inch chunks
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. Cut the potatoes into uniform 1-inch cubes and slice the smoked sausage into even 1/2-inch rounds.
  3. In a large mixing bowl, combine the sliced sausage and potato chunks. Drizzle with olive oil and add the garlic powder, smoked paprika, dried oregano, salt, and black pepper.
  4. Toss the mixture vigorously until all ingredients are evenly coated in oil and seasoning.
  5. Spread the mixture in a single layer on the prepared baking sheet, ensuring pieces are not overly crowded to allow for roasting rather than steaming.
  6. Roast for 40–45 minutes, flipping the mixture halfway through with a spatula, until potatoes are golden-brown and the sausage edges are crisped.
