Ingredients:

  • 1.5 lb Italian Sausages (Sweet or Hot)
  • 3 large bell peppers, sliced into 1-inch strips
  • 1 large yellow onion, sliced into wedges
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp coarse black pepper

Instructions:

  1. Preheat your oven to 425°F (218°C).
  2. In a large mixing bowl, combine the sliced bell peppers and onions. Drizzle with olive oil and sprinkle in the oregano, garlic powder, salt, and black pepper. Toss thoroughly until every slice is glistening.
  3. Line a rimmed baking sheet with parchment paper. Spread the vegetables in a single layer, leaving small gaps.
  4. Nestle the whole sausages in between the vegetables, ensuring the pan is not crowded to allow for airflow.
  5. Slide the pan into the center rack and roast for 20–25 minutes.
  6. Halfway through (around the 12-minute mark), use tongs to rotate the sausages and toss the vegetables until the sausages are browned and peppers have charred blisters.
