Ingredients:

  • 3/4 cup (180ml) fresh lemon juice, strained
  • 1/2 cup (100g) honey
  • 2 cups (480ml) chilled filtered water
  • 1 cup (30g) fresh mint leaves, packed
  • 4 cups (900g) ice cubes
  • 1 lemon, sliced into thin rounds
  • 6 fresh mint sprigs

Instructions:

  1. Combine the fresh lemon juice, honey, and chilled water in the blender carafe. Pulse for 10 seconds to ensure the sweetener is fully integrated into the citrus juice.
  2. Add half of the ice cubes to the blender. Start on the lowest speed and quickly increase to high. While the blender is running, slowly add the remaining ice through the lid opening. Blend on high for 30–45 seconds until the mixture is a uniform, pale green, and has a thick, spoonable consistency.
  3. Pour the slush immediately into chilled glasses. Garnish each glass with a thin lemon wheel tucked into the side and a fresh mint sprig placed centrally.
