Ingredients:

  • 10-12 fresh mint leaves
  • 1 oz fresh lime juice
  • 2 tsp simple syrup
  • 1 pinch sea salt
  • 4-6 oz chilled club soda
  • 1 cup crushed ice
  • 1 lime wheel
  • 1 fresh mint sprig

Instructions:

  1. Place mint leaves, lime juice, and syrup in the bottom of the glass. Use a muddler to press the mint 3-4 times gently until a strong, fresh mint aroma is released, keeping the leaves mostly whole.
  2. Fill the glass to the brim with crushed ice to instantly chill the drink and hold the mint leaves in place.
  3. Pour the chilled club soda over the ice. Use a long spoon to gently lift the mint and lime from the bottom to the top in one fluid motion to maintain carbonation.
  4. Garnish by sliding a lime wheel against the inside of the glass and tucking in a mint sprig that has been slapped against your wrist to release its oils.
