Ingredients:

  • 1 cup (20g) fresh mint leaves, stems removed
  • 2 tbsp (25g) granulated sugar
  • ⅓ cup (80ml) malt vinegar
  • ¼ tsp (1.5g) fine sea salt

Instructions:

  1. Finely chop the fresh mint leaves by hand to avoid bruising the leaves.
  2. In a small mixing bowl, combine the granulated sugar, salt, and vinegar. Whisk vigorously for 1-2 minutes until the sugar crystals have completely dissolved.
  3. Fold in the minced mint and stir gently. Let the sauce sit at room temperature for at least 10 minutes before serving to allow the flavors to infuse.
