Ingredients:
- 1 cup (20g) fresh mint leaves, stems removed
- 2 tbsp (25g) granulated sugar
- ⅓ cup (80ml) malt vinegar
- ¼ tsp (1.5g) fine sea salt
Instructions:
- Finely chop the fresh mint leaves by hand to avoid bruising the leaves.
- In a small mixing bowl, combine the granulated sugar, salt, and vinegar. Whisk vigorously for 1-2 minutes until the sugar crystals have completely dissolved.
- Fold in the minced mint and stir gently. Let the sauce sit at room temperature for at least 10 minutes before serving to allow the flavors to infuse.
