Ingredients:
- 1 cup (25g) fresh mint leaves, packed
- 1/2 cup (120ml) cold water
- 1/3 cup (110g) honey
- 1 can (400ml) full-fat coconut milk, chilled
- 1/2 cup (120ml) fresh lime juice
- 1 tsp (5g) lime zest
Instructions:
- Place the fresh mint leaves, cold water, and honey into the blender. Pulse on high until the mixture is a vivid green and the leaves are completely pulverized. Optionally, pour through a fine-mesh strainer for a smoother texture.
- Add the chilled coconut milk, fresh lime juice, and lime zest to the mint base. Blend on medium speed for 30-60 seconds until the mixture is uniform and slightly frothy.
- Pour the mixture evenly into popsicle molds, leaving 1/4 inch of space at the top. Insert popsicle sticks and freeze for at least 6 hours or overnight until firm.
