Ingredients:
- 1 cup mayonnaise (240g)
- 16 oz full-fat sour cream (450g)
- 4 oz softened cream cheese (115g)
- 10 oz frozen chopped spinach, thawed and squeezed dry (284g)
- 8 oz canned water chestnuts, drained and finely chopped (225g)
- 3 large green onions, finely sliced (45g)
- 1 package Knorr Vegetable recipe mix (0.9 oz / 25g)
- 1/8 tsp ground nutmeg
Instructions:
- Place thawed spinach in a clean kitchen towel or cheesecloth. Twist and squeeze with maximum force over the sink until no more liquid escapes and the spinach is a dry puck.
- In a large mixing bowl, whisk together the mayonnaise, sour cream, softened cream cheese, and the Knorr Vegetable recipe mix until smooth and fully combined.
- Using a rubber spatula, fold in the dried spinach (breaking up any clumps), the chopped water chestnuts, sliced green onions, and ground nutmeg.
- Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours. This allows the dehydrated vegetables in the soup mix to fully hydrate and the flavors to meld.
- Give the dip a quick stir before serving. Serve in a hollowed-out sourdough bread bowl or with crackers and crudités.
