Ingredients:

  • 1 cup mayonnaise (240g)
  • 16 oz full-fat sour cream (450g)
  • 4 oz softened cream cheese (115g)
  • 10 oz frozen chopped spinach, thawed and squeezed dry (284g)
  • 8 oz canned water chestnuts, drained and finely chopped (225g)
  • 3 large green onions, finely sliced (45g)
  • 1 package Knorr Vegetable recipe mix (0.9 oz / 25g)
  • 1/8 tsp ground nutmeg

Instructions:

  1. Place thawed spinach in a clean kitchen towel or cheesecloth. Twist and squeeze with maximum force over the sink until no more liquid escapes and the spinach is a dry puck.
  2. In a large mixing bowl, whisk together the mayonnaise, sour cream, softened cream cheese, and the Knorr Vegetable recipe mix until smooth and fully combined.
  3. Using a rubber spatula, fold in the dried spinach (breaking up any clumps), the chopped water chestnuts, sliced green onions, and ground nutmeg.
  4. Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours. This allows the dehydrated vegetables in the soup mix to fully hydrate and the flavors to meld.
  5. Give the dip a quick stir before serving. Serve in a hollowed-out sourdough bread bowl or with crackers and crudités.
