Ingredients:

  • 1.4 kg Apples, Peeled and sliced
  • 50g Granulated Sugar
  • 1 tbsp Lemon Juice
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 2 tsp Cornstarch
  • 90g old-fashioned Oats
  • 125g All Purpose Flour
  • 200g Light Brown Sugar
  • 1/2 tsp Baking Powder
  • 1/2 tsp Sea Salt
  • 115g Unsalted Butter

Instructions:

  1. Preheat the oven to 180°C. Note: A fully hot oven is vital for the topping to set quickly.
  2. Peel and slice the 1.4 kg of apples into 6mm wedges.
  3. Toss apples with 50g granulated sugar, lemon juice, cinnamon, nutmeg, and cornstarch until every slice is glossy and coated.
  4. Transfer the fruit mixture into your baking dish and spread it out into an even layer.
  5. Combine 125g flour, 90g oats, 200g brown sugar, baking powder, and salt in a separate bowl.
  6. Rub in the 115g cold cubed butter using your fingers or a pastry cutter until the mixture looks like coarse, damp sand with some pea sized lumps.
  7. Scatter the topping evenly over the apples, making sure to cover the corners where the fruit tends to dry out.
  8. Bake for 45 minutes until the topping is deep golden brown and the fruit juices are thick and bubbling.
  9. Rest the dish for at least 10 minutes. Note: This allows the sauce to fully set so it doesn't run everywhere when you serve it.
