Ingredients:

  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 tbsp maple syrup
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 1/2 cups corn
  • 2 ripe avocados, diced
  • 1 red bell pepper, finely diced
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced

Instructions:

  1. Rinse the black beans under cold water until the foam disappears to remove excess sodium.
  2. Dice the red bell pepper, red onion, and avocado into uniform pieces.
  3. In a small jar, combine the olive oil, lime juice, cumin, maple syrup, salt, and pepper. Shake vigorously for 30 seconds until emulsified.
  4. In a large mixing bowl, combine the rinsed black beans, corn, diced pepper, red onion, and chopped cilantro.
  5. Pour the dressing over the bean and corn mixture and toss gently.
  6. Fold in the diced avocado at the end using a spatula to keep the cubes intact.
