Ingredients:
- 1/4 cup extra virgin olive oil
- 3 tbsp fresh lime juice
- 1 tsp ground cumin
- 1 tbsp maple syrup
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 can (15 oz) black beans, rinsed and drained
- 1 1/2 cups corn
- 2 ripe avocados, diced
- 1 red bell pepper, finely diced
- 1/2 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
Instructions:
- Rinse the black beans under cold water until the foam disappears to remove excess sodium.
- Dice the red bell pepper, red onion, and avocado into uniform pieces.
- In a small jar, combine the olive oil, lime juice, cumin, maple syrup, salt, and pepper. Shake vigorously for 30 seconds until emulsified.
- In a large mixing bowl, combine the rinsed black beans, corn, diced pepper, red onion, and chopped cilantro.
- Pour the dressing over the bean and corn mixture and toss gently.
- Fold in the diced avocado at the end using a spatula to keep the cubes intact.
